Arugula is not lettuce - its spicy and has more stem than baby lettuce leaves. Not being lettuce means, though, that it makes for a more forward and flavorful salad, generally calling for a heavy/creamy or strong tasting dressing and possibly cheese like feta to compliment. Also, arugula can just as easily be wilted down as a cooked green like spinach, where it loses its spicy flavor.
Store in a sealed plastic bag in the fridge. Use within a week.
Arugula Salad With Shaved Parmesan

2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon honey
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 cups arugula
1/4 cup shaved Parmesan cheese
In a large bowl, whisk together the olive oil, lemon juice, honey, and salt and pepper. Add the arugula to the bowl and toss. Top with the shaved Parmesan and more pepper taste. Makes 4 cups.
