We grow green onions from multiple onion varieties, including potato onions and Egyptian walking onions. They are nice thick green onions rather than the thin scallions you find in the grocery store. A good substitute for bulb onion but also mild enough to be eaten raw. Use as much of the green tops as you want.
Store in sealed plastic bag in fridge. Use within 1-2 weeks. Tops will yellow but bottoms will remain good.
Use cooked or raw in any savory dish.
